Monday Night Bridge : Split Rubbers


Tonight was another bridge night. First a vegetarian dinner. Cris doesn't eat much meat, and eating veggie is supposedly healthy so we always try to find something creative and vegetarian for Monday nights. This Monday was one of our favorites. Pasta a la Pomodoro


It's not pasta with tomatoes, but rather a pasta dish we had at Pomodoro restaurant in Boston, and have since copied.

Recipe:
1 can white kindney beans (drained)
1 box pasta (we like farfalle), cooked
8 cloves garlic, sliced
1 bunch old spicy arugula (not baby arugula)
a couple of cherry tomatoes

In a big pot, or wok, add olive oil, heat, add garlic, sautee until about brown.
Add beans, heat
Add cooked pasta
Add Aaugula, cook until arugula has shrunk
Add tomatoes for color, heat for 1 minute
Add more olive oil, serve immediately with salad


Onto the Bridge. We played two rubbers, and a one game tiebreaker.
